Cream Cheese Cupcakes

We celebrated Dr. Zimmerman's birthday on October 7th. I am ONE lucky girl that this guy is mine! He requested hot wings for his birthday dinner--he's not very high maintenance. wink I'll share that recipe later! But what's a birthday without a treat?! Even though we don't eat sugar, I was able to whip up something sweet for my sweet. This tastes a bit like a carrot cake. The cream cheese frosting MAKES the cupcake. 

Cupcake Ingredients

1 1⁄2 c

Almond Flour

1⁄3 c

Coconut Flour


1 c

coconut milk

10 dr

Sweet Leaf Stevia

vanilla beans

1⁄2 t


1⁄2 t

baking soda

1 t

cream of tartar

1⁄2 c


1⁄2 c

shredded coconut

1 T


Cupcake Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all dry ingredients together. 
  3. Add wet ingredients to dry ingredients and mix together well. 
  4. Add water if too thick. 
  5. Bake for 20 minutes in cupcake cups. 

Frosting Ingredients

1⁄2 c

Cream Cheese

1⁄4 c

grass-fed butter

10 dr

Sweet Leaf Stevia

10 dr

Pure Vanilla Extract

1 c

Creme Fraiche

Frosting Instructions

  1. Whip all ingredients together with mixer until smooth.
