Chili Chicken Salad

I am a chicken salad junkie! I love the combination of grapes, celery and chicken. It’s just so good! But when you add chili powder in the mix, it’s ridiculous! You are going to love this!

Chili Chicken Salad

Ingredients

  • 2 organic chicken breasts
  • 1 Cup sliced almonds
  • 1 Cup Celery celery
  • 1 Cup red grapes
  • Primal Mayo 
  • 2 tbsp. Chili Powder
  • 1 tbsp. Paprika
  • Salt to taste

Directions

  1. Wash Chicken breasts. Cut into cubes.
  2. Bring chicken to a boil.
  3. Chop celery. Add to bowl.
  4. Cut grapes in 4’s. Add to bowl.
  5. Add sliced almonds to bowl.
  6. Once chicken is cooked through, remove from water. Add to food processor.
  7. Add chicken to bowl.
  8. Add chili powder. Mix thoroughly.
  9. Add paprika. Mix thoroughly.
  10. Add 1 cup Primal Mayo to mixture. Continue to add Primal Mayo until the consistency is to your liking.
  11. Salt to taste.
